NAG is a naturally occurring substance.It is monosaccharide.
NAG is abundant in shells of shellfish, especially in crab or shrimp, as chitin.
Chitin is a polysaccharide, solely consists of NAG.
Not only in crustacean, NAG is also abundant in mammalia, including human. There are several hundreds of monosaccharides in the nature. But among them, only 10 or so consists of our body: NAG is one of such useful monosaccharides.Our body consists of lot of cells, which is estimated to be 60 trillion. Sugar chains are on the surface of every single cell. They work to recognize and connect to internal or external substances. NAG is one of the major unit of the sugar chains. Hyaluronic acid consists of two monosaccharides, and the half of them is NAG. Hyaluronic acid is in the skin, eyes, cartilages etc., and helps to keep moisturized. It is also known that cow milk contains NAG as both free form and milk oligosaccharide. Raw material of NAG is crustacean shells, that is, crab and/or shrimp shells. Shells are converted into chitin by removing protein and mineral (calcium carbonate). Then, chitin is gently broken down (hydrolyzed) to NAG by both acid and enzyme.
White, crystalline fine powder. Since NAG is a kind of sugar, NAG is sweet. It is not as sweet as cane sugar, but no acrid or salty taste. Highly stable against heat and pH change. Highly soluble in water. NAG’s such characteristics are highly suitable for food use.
NAG is highly stable against heat and pH. 5% NAG solution with different pH. For comparison, ordinary glucosamine solutions are also prepared. After heating at 100 C for 1 hour, no obvious change is observed in NAG solutions. As seen, NAG is stable between pH 2 and 8 at 100 °C, or even at 120 °C.
Hyaluronic acid is biologically synthesized in our body. The synthesis process originally starts from glucose. However, there are a lot of steps to be hyaluronic acid finally. It is hypothesized that the supplementation of NAG provides a shortcut for the complicated metabolic cascade of HA. Actually, hyaluronic acid consists of NAG and glucuronic acid.

Support healthy skin condition.
Hyaluronic acid is abundant in dermis, inner layer of skin. HA fills up the space between the collagen structure and keep moisture inside binding a large amount of water. Since the half of hyaluronic acid consists of NAG, NAG can be a precursor of hyaluronic acid. And it could promote healthy skin.
We conducted a clinical study to prove the effect of orally ingested NAG on skin condition. Total 39 women with dry skin are divided into 3 groups. Each group took 250 ml of milk-based beverage containing different ingredient respectively: One is 500 mg of NAG, another is 50 mg of hyaluronic acid, and the last one is dextrin for placebo. Volunteers took the beverage once a day for 8 weeks. Then skin moisture content was measured three time: before the test, after 4 weeks and 8 weeks.
Vertical axis is change in moisture content; The higher, the better. Red is NAG group, Blue is Hyaluronic acid group, and Black is Placebo group. As you see, significant increase was observed in NAG group.
NAG promotes healthy joint Hyaluronic acid is also abundant at joint in synovial fluid or cartilage for lubrication or shock absorption. Therefore, NAG can promote healthy joint. Cartilage of joint, or articular cartilage, is found where bones connect together. Proteoglycan is a major component of cartilage together with collagen. Proteoglycan fills the space of collagen structure and keeps a large amount of water, which enables joint to move smoothly and absorb shocks. Hyaluronic acid and chondroitin sulfate are major constituents of proteoglycan. Hyaluronic acid is also rich in joint lubricating fluid, Synovial fluid. Since NAG is changed into hyaluronic acid or chondroitin sulfate, NAG could be good for joint health.
